FROZEN SWEETS
Honey-Mango Delight
Sweet ripe mango 2-1/2 cups
Honey 2 tblsps
Thick cream 1-1/4 cups
Pomegranate 1
Peel, de-seed and cut mango into small cubes. Peel and de-seed pomegranate. Puree most of the mango along with the honey. Whisk cream until thick. Blend in mango puree and add remaining mango pieces. Mix well and chill in the freezer for 1 hr. Remove from freezer and place in the fridge to let it soften a bit. Sscoop into dessert dishes, sprinkle with pomegranate seeds and offer at once.
Mango Banana Split
1 banana, split lengthwise
3 scoops cottage cheese
1 mango, peeled and sliced
6 slices papaya
1 tbsp. granola
3 oz. cream cheese
1 tbsp. lime juice
3 tbsp. honey
3/4 cup whipped heavy cream
Place 3 scoops of creamy cottage cheese on banana halves sliced lengthwise. Top with mango and papaya slices. Sprinkle with 1 tbsp. granola. Serve with dressing by blending 3 oz. cream cheese, 1 tbsp. lime juice, 3 tbsp. honey and 3/4 cup whipped heavy cream. If you want to spice it up, sprinkle a little cayenne into the topping.
Tender Coconut Delight
2 Tender coconuts with thin layers of cream
1 can condensed milk
1 can fresh milk
3 tsp agar-agar
In a vessel place the water from the tender coconuts. Add condensed milk. Then with the same can measure 1 can of fresh milk. Add this milk to the above and stir well. In a small cup prepare agar-agar according to directions. Quickly add this to the coconut water-milk mixture. Now remove the coconut cream from inside the tender coconuts and add to the mixture. Set this mixture in the freezer to set.
