BALLS & DUMPLINGS - MODAK
Ganeshji Ke Pvare Modak
3 cups rice flour
1/4 cup raisins, minced
1 coconut grated
1/2 tsp cardamom powder
1 cup sugar
Ghee
1/2 cup almonds chopped finely
Salt to taste
Boil 2 cups of water and add a pinch of salt and 2 tsps ghee. As it boils add the rice flour and cook stirring quickly. Remove and knead into a dough while still warm. Make a syrup from the sugar till one string consistency is obtained. Add coconut and cook till done. Add almonds, raisins and cardamom powder. Remove from fire and cool. Make equal portions of rice dough and the coconut mixture. Make a small cup of each portion of the dough, put a portion of the coconut mixture in it and shape it like a modak. Repeat till all modaks are done. To shape the modak, bring together the edges of the dough cup and pleat them together to meet in a fluted top. Steam cook the modaks till done. Be careful not to break them. Offer with hot ghee spritzed on top.
Moodak
Rice flour 2 cups
Water 4 cups
Ghee 1 1/2 tsp
For the Filling:
Coconut, grated 2 cups
Sugar 1 cup
Dry fruits 4 tbsps.
Milk 1/4 cup
Boil the water and ghee and remove from heat. Add the rice flour, cover and allow it to cool. Later, knead well and keep aside. For the filling, mix the grated coconut, sugar and dry fruits. Put this mixture in a frying pan, cook stirring all the time. Then add the milk, mixing well and remove off the heat once it is totally dry. Make equal balls of the rice dough, shape each ball like a small ' vati ' and place the filling in the middle. Now pinch the open edges together and shape the stuffed ball into a decorative moodak shape. Steam the moodak's for 10 minutes, cool and keep in air-tight containers until ready to offer.
