PUDDINGS - MOUSSE
Lime Mango Mousse
2 cups whipped cream
1 tsp. grated lime rind
1 tbsp. lime juice
1/2 cup powdered sugar
1 peeled & pureed mango
1 (250g.) pkg. cream cheese
In an electric mixer, at medium speed, beat cream cheese with 1 peeled, pureed mango, powdered sugar, lime juice and grated lime rind until smooth. Fold in whipped cream (already whipped). Spoon into dessert cups and refrigerate.
Litchi Mousse with Yoghurt
Yoghurt 4 pounds
Litchi pulp 2 pounds
Mango pulp 2 tablespoons
Agar Agar 3 teaspoons
Water 4 tablespoons
Cream 4 oz.
Sugar to taste
Juice of 1/2 lemon
Peel the litchis and liquidize them along with yogurt, mango pulp and sugar in a mixer. Dissolve agar agar in water and add to the mixture. Add cream. Pour into a wet mold. Chill in the fridge till firm and decorate with litchi fruit and whipped cream, and offer.
Mango Mousse
1 cup apple juice
1 tbsp. sugar
2 cups heavy cream, whipped
dash of nutmeg
1 cup mashed mangos
Mix mango and apple juice. Add sugar to taste. Freeze for 30 minutes. Beat it well then fold in whipped cream and nutmeg. Pour into porcelain petit pots and chill for several hours before offering.
