FUDGE - KATLI

Almond Katli

Almonds ½ cup
Sugar, powdered 1/3 cup
Rose essence 4 drops
Cardamom powder 1/4 tsp.
Silver varakh 1 pc.


Soak the almonds in water, drain, remove the skin and grind to a coarse paste. Mix the almonds and sugar well and cook in a kadai on a medium flame. Keep stirring and within 7-8 minutes the mixture should thicken and will come away from the sides of the kadai. Remove the mixture from the fire and mix in the rose essence. Quickly transfer the mixture on to a greased wooden or marble board. Roll the mixture evenly, sprinkle cardamom powder and press silver varakh over it. Cut it into diamond or square shapes.

Tamal Badham Kathli

Almonds - 1 cup
Sugar - 1-1/2 cups
Saffron - a pinch
Ghee - 1 tsp


Boil 2 to 2-1/2 cups of water. Add the almonds to the boiling water, turn off the heat, cover and let sit for 10 - 15 minutes. Decant the water and peel the almonds, and grind into a thick fine paste. (It should feel like rava when touched.) Add the sugar to this paste and heat up in a heavy bottomed pan. When the sugar has dissolved completely, stir continuously over a medium flame. After 5 - 8 minutes, take a little part of this and try rolling it out in your hand. If this is possible, then the paste has reached the correct consistency. If not, heat up for a minute or 2 more, or until this is possible. Remove from the heat and add the saffron (ground into a paste) and the ghee and mix uniformly. Pour over a greased plate and flatten out using a rolling pin (or level it out evenly using the backside of a spoon). While still slightly warm cut it out into diamond shaped pieces.

Tamal Cashew Kathli

Cashews - 20
Grated Coconut - ¾ cup
Sugar - 3 cups
Ghee - 2 tbs


Soak the cashews in water for an hour and then grind it into a smooth mixture along with the coconut. Heat up a pan and add the ground paste and sugar and stir continuously. Add the ghee and continue to stir frequently over a low heat. Once the sweet no longer sticks to the sides of the vessel, remove from the heat and pour over a greased plate and cut into pieces.
