CAKES, PIES & COOKIES - COOKIES

Fruit Crunch

Flour 2 cups
Castor sugar ½ cup
Condensed milk ½ cup
Carob powder ½ cup
Almonds ½ cup
Baking powder 1 tsp.
Butter ½ cup


Sieve the flour and baking powder, then add the carob powder and butter and rub with your fingers. Now add the castor sugar and chopped almonds and then gently fold in the condensed milk and roll into small balls. Place them on a greased baking tray and bake in a moderate oven at 190 º C for 20 minutes. Once done, cool and store in air-tight containers until ready to offer.

Nan Khatai

¾ cup Maida (regular flour)
2/3 cup Butter
2/3 cup Powdered sugar
¼ cup Fine sooji (semolina)
2 tsp. Vanilla
A few Almonds or Cashewnuts


Cream the butter till it looks fluffy and light. Add the sugar and mix well. Add vanilla, then add the maida and sooji. Make a smooth dough. Form into small balls, flatten slightly, and cut across in the center. Place a piece of nut on the top. Bake on a greased pan at 150 C for about 25-30 minutes. Cool, then offer.

Nankathai

1 cup butter
1 cup powdered sugar
2 cups all purpose flour
Pinch of nutmeg powder
1/4 tsp cardamom powder
5-6 tblsp of pista powder (ground almond)


Mix the butter and powdered sugar. Gently add the flour, cardamom, nutmeg, and pista powder. Make into small balls. Keep on a baking sheet 2" apart and bake at 300 degrees for about 20-30 minutes or till done.

Peanut Cookies

Ghee - 1-1/2 cups
Sugar - 1-1/4 cups
Maida - 2 cups
Crushed Peanuts - ½ pound
Vanilla essence - 3 drops
Baking powder - 2-1/2 tsp


Beat the ghee, sugar and vanilla along with a handful of crushed peanuts. Sieve the maida and baking powder together. Mix this with the beaten ghee, etc., and knead into a very soft dough. Divide into small balls and roll out thickly over the crushed peanuts. Preheat the oven and bake in a cookie sheet at 180° C for 12 - 15 minutes.

Shradha's Almond Cookies

1/2 cup butter
1/3 cup sugar
1 cup plain flour
3 tablespoons ground almonds
several drops almond essence
1 dozen blanched almonds


Preheat the oven to 350 F. Cream the butter and sugar together in a bowl. Add the flour, ground almonds and vanilla and combine thoroughly. Roll the mixture into 12 balls. Press each ball firmly in the palms of your hands to flatten. Put ab almond in the centre of each cookie. Place the cookies on an ungreased biscuit sheet. Bake for 10-12 minutes.
